Ingredients

500 g plain yogurt , beaten
3 -4 tablespoons gram flour
1 teaspoon red chili powder
1 teaspoon turmeric powder
1 inch piece ginger
3 -4 green chilies , washed , ends trimmed and slit
2 -3 garlic flakes , peeled , washed and finely chopped
15 fresh curry leaves , washed and torn
salt
1 teaspoon black mustard seeds
2 teaspoons extra virgin olive oil
1 tablespoon cumin seed
1 teaspoon fenugreek seeds
5 -6 whole red chilies ( optional )
1/4 teaspoon asafoetida powder ( hing )
4 cups water
2 green chilies , finely chopped or 1/4 teaspoon red chili powder
1 cup gram flour
salt
1 pinch baking soda
4 teaspoons fresh coriander leaves , washed and finely chopped
1 onion , peeled , washed and finely chopped
oil , to deep fry
water , as required to knead
1/4 teaspoon turmeric powder
Punjabi Kadhi with Bhajiyas is one of the most preferred dishes in North India. The yogurt-based curry with crispy fried besan flour fritters is a comfort food perfect to warm you up on a chilly day. Instructions

1.For Kadhi:
2.Blend the beaten curd and gram flour to make a smooth paste.
3.Boil water in a deep, heavy-bottomed pan on medium heat.
4.Add the curd-gram flour paste, red chili powder, salt, and turmeric powder in the boiling water, and keep stirring continuously.
5.Roast the cumin seeds, black mustard seeds, and fenugreek seeds in a separate pan till it starts popping up.
6.Add ginger, garlic, green chilies, and curry leaves to the roasted seeds.
7.When the mixture turns golden brown, switch off the flame and add asafoetida.
8.Mix the roasted seeds mixture into the boiling kadhi mix.
9.Cover and cook for 20-25 minutes while stirring occasionally.
10.For Bhajiyas:
11.Mix chopped onions, gram flour, salt, turmeric powder, baking soda, and water in a bowl to form a thick batter.
12.Heat oil in a kadhai on medium flame.
13.Drop the spoonfuls of batter in the hot oil, and deep fry till both sides golden-brown.
14.Drain on an absorbent paper to remove excess oil.
15.Kadhi and Bhajiyas are ready to serve!
