Ingredients

1 1/2 teaspoons turmeric powder

2 medium yellow onions , peeled , washed and finely chopped
3 cloves garlic , peeled , washed and finely chopped
2 medium green chilies , washed , ends trimmed and finely chopped
1 inch fresh ginger , peeled , washed and finely chopped
1 tablespoon pure wesson canola oil
2 medium tomatoes , peeled , washed and chopped
2 teaspoons salt
1 1/2 cups cut okra , defrosted and washed in lots of water
1 1/2 cups sweet corn , i use bird eye sweet corn , young tender , defrosted and washed in lots of water

Instructions

1.In a small bowl, mix together the turmeric, red chili powder, and coriander powder.
2.In a large pan, heat the oil over medium heat and add the mustard seeds and cumin seeds. Cook for 30 seconds or until they start to crackle.
3.Add the onions, garlic, green chilies and ginger to the pan and cook for 2-3 minutes or until the onions turn translucent. Stir occasionally to prevent sticking or burning.
4.Add the tomatoes, salt and spice mix to the pan and stir well. Cook for 3-4 minutes or until the tomatoes soften and the mixture forms a paste.
5.Add the okra and sweet corn to the pan and stir well. Cover the pan and cook for 10-15 minutes or until the vegetables are cooked through, stirring occasionally.
