Ingredients

1 cup rice , washed and drained
2 1/2 cups water
2 green chilies , chopped ( I use 1 large and 1 small )
1 1/2 cm ginger , peeled and chopped
5 spring onions , chopped ( both whites and greens )
2 1/2 tablespoons oil
1 tablespoon mint leaf , chopped
1 tablespoon coriander leaves , chopped
2 cloves , powdered
2 green cardamoms , powdered
1 cinnamon stick , powdered ( optional )
1 teaspoon salt
3 -5 spring onions , chopped , to garnish

Instructions

1.In a pot, heat the oil and add in the chopped ginger and green chillies. Saute for a minute.
2.Add in the chopped spring onions (both whites and greens) and saute for another minute.
3.Add in the washed and drained rice and stir for 2-3 minutes until it starts to change colour.
4.Add in the powdered cloves, green cardamom, and cinnamon stick, and mix well.
5.Add in the chopped mint and coriander leaves and mix once more.
6.Add in the water and salt, and bring to a boil.
7.Reduce the heat to low, cover the pot and let it cook for 12-15 minutes until the rice is cooked.
8.Once done, garnish with the chopped spring onions and serve hot.
