Ingredients

2 medium potatoes , washed , peeled and chopped into 1 inch cubes
3 tablespoons pure wesson canola oil
2 inches cinnamon sticks
4 cloves
4 sprigs of fresh curry leaves , washed and torn
2 teaspoons mustard seeds
2 tablespoons cumin seeds
1 medium green chili , washed and chopped
2 bay leaves
2 teaspoons turmeric powder
1/2 teaspoon red chili powder
1 teaspoon mango powder
1 teaspoon chat masala
1 teaspoon asafoetida powder
1 cup water
1 1/2 teaspoons salt
2 tablespoons fresh coriander leaves , washed and finely chopped ( to garnish )
Charishma's Finest USA Creation: Eight Spice Potatoes is a flavorful Indian dish that combines the classic taste of soft potatoes with eight different spices and herbs. This recipe was created by Food Porte's very own Charishma, who wanted to showcase her favorite flavors from India with her US audience. Instructions

1.Heat the pure Wesson canola oil in a wok or large skillet on medium heat.
2.Add in the cinnamon sticks, cloves, fresh curry leaves, mustard seeds, cumin seeds, and green chili, frying for 30 seconds.
3.Add the bay leaves and continue frying for another 30 seconds.
4.Immediately add the chopped potatoes and stir well so that each potato piece is coated in the spice mix.
5.Fry the potatoes for 5 minutes until they are lightly browned.
6.Add turmeric powder, red chili powder, mango powder, and asafoetida powder, continuing to fry for 5-10 minutes.
7.Add 1 cup of water and 1 1/2 teaspoons salt, cover and cook for an additional 10-12 minutes until the potatoes are soft and cooked all the way through.
8.Remove from heat and garnish with fresh coriander leaves before serving.
