Ingredients

2 1/2 cups grams flour
1 cup water ( you can always add more or less if desired to get the correct consistency )
1/4 teaspoon salt
1/4 teaspoon turmeric powder
1/4 teaspoon baking soda
1/4 cup rice flour
oil ( for frying )
10 cashews , broken into slightly big pieces , fried
10 raisins , fried
8 cloves , fried
14 cardamoms , powdered
1 1/2 tablespoons fresh milk
saffron , soaked in the milk
15 -16 tablespoons sugar
1 cup water ( a little less )
Charishma's Diwali Special Boondhi Ladoos are a traditional Indian sweet that is often made during Diwali, the festival of lights. Boondhis are tiny, fried drops of chickpea flour that are soaked in sugar syrup and flavored with aromatic spices like cardamom and saffron. In this recipe, Charishma adds cashews, raisins, and cloves to add crunch and spice. These ladoos are perfect to serve as a dessert for Diwali or any other special occasion. They are also a great treat to gift to friends and family during the festive season.

Instructions

1.In a large mixing bowl, combine the gram flour, water, salt, turmeric powder, baking soda and rice flour to form a smooth, lump-free batter.
2.Heat oil in a deep frying pan on medium-high heat.
3.Hold a perforated ladle or a slotted spoon over the oil and pour batter over it.
4.Move the ladle or spoon in a circular motion over the oil so that the tiny drops of batter fall into the hot oil.
5.Fry the boondis until light golden brown, remove from the oil and drain on paper towels.
6.Repeat the process until all of the batter has been used up.
7.In a separate pan, add water and sugar and bring to a boil, stirring occasionally.
8.Reduce heat and add the fried boondi, cashews, raisins, cloves, cardamom powder and saffron-infused milk.
9.Stir well and cook until the syrup thickens.
10.Let the mixture cool slightly, then shape into small ladoos with your hands while still warm.
