Ingredients

1 1/2 cups basmati long-grain white rice , cleaned , washed , soaked in water for 30 minutes and drained
2 tablespoons pure wesson canola oil
2 teaspoons cumin seeds
2 -3 green cardamoms
2 cloves
1 bay leaf
1 teaspoon salt
4 cups water
1/2 inch cinnamon stick

Instructions

1.Heat oil in a deep, heavy-bottomed pot over medium heat.
2.Once the oil is hot, add cumin seeds, green cardamom, cloves, bay leaf and cinnamon stick.
3.Sauté the spices for 2-3 minutes until fragrant, stirring continuously.
4.Add the drained rice to the pot.
5.Sauté the rice until it turns translucent, stirring frequently for about 5 minutes.
6.Add salt and water, stir once, and bring to a boil on high heat.
7.Once the water comes to a boil, turn the heat to low and cover the pot with a tight-fitting lid.
8.Cook for 15-20 minutes until the rice is tender and the water is absorbed.
9.Remove the pot from the heat and let it sit for 5 minutes to steam with the lid on.
10.Fluff the rice with a fork, discard the bay leaf and cinnamon stick, and serve hot.
