Ingredients

6 cups vegetable broth , more if needed
1 cup arborio rice
1 pinch saffron
2 lemons , zest of
2 tablespoons butter
1/2 cup parmesan cheese , grated , more for garnish

6 chard leaves
1/2 lb mozzarella cheese
extra virgin olive oil , for drizzling
Chard stuffed with risotto and mozzarella is a delicious and healthy meal that is perfect for vegetarians or anyone looking to eat more vegetables. Instructions

1.In a large pot, heat the vegetable broth over medium heat.
2.Add the arborio rice and saffron, and stir to combine.
3.Cook the rice for 20 minutes, stirring occasionally, until it is tender and the broth is absorbed.
4.Remove from heat and add the lemon zest, butter, and parmesan cheese. Stir to combine and season with salt and pepper. Set aside.
5.Preheat the oven to 375°F.
6.Take each chard leaf and remove the stem. Lay the leaf flat on a work surface.
7.Spoon a portion of the risotto onto the center of the chard leaf.
8.Add a slice of mozzarella cheese on top of the risotto.
9.Fold each side of the chard leaf over the risotto and mozzarella, then roll up the whole thing to create a bundle.
10.Transfer the chard bundles to a baking dish, drizzle with olive oil, and bake for 20-25 minutes, until the chard is tender and the mozzarella is melted and bubbly.
