1 kg baby octopus ( uncooked )
1 liter vegetable stock
300 ml white wine
1 lemon , juice of
250 ml virgin olive oil
100 ml balsamic vinegar
50 ml white wine
50 ml lemon juice
3 garlic cloves , crushed
fresh ground black pepper

Instructions

1.Clean the baby octopus by removing the eyes, ink, beaks and viscera.
2.In a pot, bring the vegetable stock and the white wine to boil. Add the baby octopus and cook for 5 minutes.
3.Mix the virgin olive oil, balsamic vinegar, white wine, lemon juice, and crushed garlic together, add fresh ground black pepper.
4.Remove the baby octopus from the pot and put them into the marinade. Let it rest in a fridge for 5-6 hours.
5.Heat up the grill. Grill the baby octopus for about 2 minutes on each side until a charred crust forms.
