Ingredients

1 tablespoon soy sauce

2 green onions , finely chopped

1/3 pound beef top sirloin , thinly sliced
2 tablespoons vegetable oil
1/2 cup thinly sliced carrots
1/2 cup sliced bamboo shoots , drained
1/4 pound napa cabbage , sliced
2 cups chopped fresh spinach
3 ounces cellophane noodles , soaked in warm water
2 tablespoons soy sauce

Chap Chee Noodles is a popular Korean-Chinese dish made with glass or cellophane noodles and stir-fried vegetables. The dish is simple to make and suitable for a quick lunch or dinner. Instructions

1.In a small bowl, combine 1 tablespoon soy sauce, sesame oil, green onions, garlic, sesame seeds, 1 teaspoon sugar, and 1/4 teaspoon black pepper.
2.In a separate bowl, toss beef strips with 2 tablespoons of the soy sauce mixture and set aside.
3.Heat vegetable oil in a large skillet over medium-high heat. Add sliced carrots and bamboo shoots and stir-fry for 2 minutes.
4.Add the sliced beef and stir-fry for another 2-3 minutes until browned.
5.Add sliced napa cabbage and chopped spinach and stir-fry for another 1-2 minutes until wilted.
6.Drain the cellophane noodles, and add them to the skillet with the beef and vegetables. Pour remaining soy sauce mixture over the top and stir everything together thoroughly. Cook the mixture for another 1-2 minutes until the noodles are heated through.
7.Season with 1 tablespoon sugar, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Serve hot.
