7 ounces bok choy , root part trimmed
1 large leek , trimmed
1 daikon radish , thickly peeled
1/2 Chinese cabbage , hakusai
1 piece dashi konbu , see note
12 ounces chicken , boned
12 shiitake mushrooms , stalks removed
10 1/4 ounces tofu , block drained cubed
12 ounces sardines , cleaned filleted
1 inch gingerroot , chopped
1 extra large egg
1 1/2 tablespoons miso
20 chives , rough chopped
2 tablespoons all-purpose flour
2 1/2 cups sake
2 1/2 cups water
4 tablespoons shoyu
1 lime , rind of , grated
10 -12 white peppercorns
Chanko Nabe is a traditional Japanese dish that originated as a sumo wrestler's meal. The hearty and nutrient-rich ingredients were ideal for the wrestlers who needed a high-calorie intake to maintain their size and strength. Today, Chanko Nabe is enjoyed by many as a healthy and filling meal, perfect for colder weather or as a comforting family meal.

Instructions

1.Cut the deep fried tofu, bok choy, leek, daikon radish, Chinese cabbage, chicken, shiitake mushrooms, and sardines into bite-sized pieces.
2.Combine the ginger, egg, miso, chives, and flour in a bowl to make a sauce. Set aside.
3.In a large pot, add the sake, water, and shoyu, and bring to a boil.
4.Add the dashi konbu and white peppercorns to the pot, followed by the chicken, tofu, and vegetables.
5.Let simmer for 15-20 minutes, or until the vegetables and chicken are cooked through.
6.Add the sardines to the pot, letting them cook for 5 minutes or until done.
7.Serve hot, with the lime zest sprinkled on top.
