100 g split garbanzo beans ( chana dal )
4 tablespoons oil
250 g indian bitter melons
3 medium tomatoes , preferably ripe
3 onions , sliced
2 green chilies
2 tablespoons ginger garlic paste

Instructions

1.Rinse the split garbanzo beans (chana dal) and soak them for 1-2 hours in enough water to cover them.
2.Heat 2 tablespoons of oil in a pressure cooker and sauté sliced onions until they turn light brown.
3.Add ginger garlic paste and fry for 1-2 minutes.
4.Add chopped tomatoes and green chilies, and stir until tomatoes become soft and mushy.
5.Add the drained chana dal (split garbanzo beans) and mix well.
6.Add enough water to cover the dal and close the lid of the pressure cooker.
7.Cook for 2-3 whistles or until the dal is properly cooked.
8.Heat 2 tablespoons of oil in a separate pan and fry the sliced bitter melons (karelay) until they become slightly brown.
9.Once the dal is ready, add the fried karelay (bitter melons) and mix well.
10.Simmer for a few minutes.
11.Serve hot with rice or roti.
