Ingredients

3/4 cup channa dal ( in a pinch , use canned chickpeas )
3/4 cup water
2 tablespoons vegetable oil or 2 tablespoons ghee
1/4 teaspoon black mustard seeds
2 bay leaves
1 cinnamon stick
1 onion
3 garlic cloves , crushed
1 teaspoon ginger ( grated )
10 ounces frozen spinach , thawed
1/2 teaspoon garam masala
1/2 teaspoon coriander powder
1/4 teaspoon chili powder
1/2 teaspoon salt

Instructions

1.Rinse the lentils well and soak them in warm water for 30 minutes.

5.Add cooked lentils to the skillet and cook for 2-3 more minutes until everything is well combined and the flavors have infused. Serve hot with rice or bread.
