2 loaves egg bread ( NOT the very sweet kind ) or 2 loaves challah
1 lb ground veal or 1 lb lean ground beef
1 lb ground pork
2 tablespoons Worcestershire sauce
1 cup diced onion
3 cups leeks , sliced into thin rings ( or half rings , if that makes cleaning easier )
2 cups of diced celery
1 cup of finely diced carrot
1 1/2 tablespoons dry ground sage
salt and pepper

Instructions

1.Preheat your oven to 350 degrees F. Begin by cutting up the egg bread or challah into small cubes and placing them into a large mixing bowl. Set aside.
2.In a large skillet over medium-high heat, brown the ground veal or beef, along with the ground pork. Drain the fat from the meat, and add in Worcestershire sauce. Allow the mixture to cool for a few minutes.
3.In a separate saucepan, sauté the diced onion and leeks until translucent, then add in the celery and carrot. Cook for an additional 5 minutes, before adding the mixture to the meat.
4.Add the meat and vegetable mixture to the cubed bread in the mixing bowl, and sprinkle with dry ground sage and salt and pepper. Mix everything together well, until all ingredients are evenly distributed.
