2 cloves garlic , minced , or to taste
2 1/2 cups chopped tomatoes
1 teaspoon ground cumin
1 teaspoon paprika
1 teaspoon salt
1 hot chile pepper , seeded and finely chopped , or to taste

Instructions

1.Heat olive oil in a skillet over medium heat. Add onions and peppers to the pan and cook for 5 minutes or until soft.
2.Add garlic and cook until fragrant, about 1 minute.
3.Stir in chopped tomatoes, cumin, paprika, salt, and hot chile pepper. Cook until tomatoes are soft and mixture has thickened, about 10 minutes.
4.Using a large spoon, make 4 wells in the tomato mixture. Crack an egg into each well.
5.Cover the skillet and let it simmer until the whites are set and the yolks are cooked to your liking, about 5 minutes.
