Ingredients

1 kg potato
1 tablespoon red chili powder
salt
1 teaspoon ground roasted cumin seeds
1/2 teaspoon nigella seeds
1 tablespoon garlic ( or more I like a LOT more-almost 1 T )
1 tablespoon ginger ( or more I like a LOT more-almost 1 T )
4 green chilies , finely chopped
1 bunch coriander , finely chopped
1 cup concentrated tamarind juice
Chaat-Pata Aloo, also known as a Potato Chaat, is a popular street food item in India. It is a spicy and tangy dish that is typically served as a snack or a side dish. It is made by mixing fried potatoes with a variety of spices and seasonings, including red chili powder, cumin, and tamarind juice. Instructions

1.Peel and cut the potatoes into small cubes. Rinse them well and then pat them dry with a towel.
2.Fry the potatoes in hot oil until they are golden brown and crispy.
3.Drain the fried potatoes on a paper towel to remove excess oil.
4.In a separate pan, heat up some oil and add the red chili powder, salt, cumin seeds, nigella seeds, garlic, and ginger. Stir well and cook for 1-2 minutes.
5.Add the chopped green chilies, coriander, and tamarind juice to the pan. Cook for an additional minute.
6.Add the fried potatoes to the pan and mix well, making sure the spices coat the potatoes evenly.
7.Cook for another 3-4 minutes, stirring occasionally. Remove from heat and serve hot.
