4 large flour tortillas

Instructions

1.Heat the sunflower oil in a large skillet over medium-high heat.
2.Cook the onion and red bell pepper until soft and slightly browned. Add the chopped chicken thighs and cook until browned on all sides.
3.Stir in the green chilies, garlic, tomatoes, and frozen corn. Cook until the vegetables are soft and the chicken is fully cooked.
4.Mix in the taco sauce and chopped green onions. Remove from heat.
5.Place a large spoonful of the chicken mixture in the center of each flour tortilla. Fold in the sides and roll up the tortilla.
6.Heat up more oil in a large pot until hot. Fry each chimichanga until golden brown.
7.Serve with shredded lettuce, sour cream, and ready-made guacamole.
