Ceviche is a traditional Peruvian dish that has become popular all over the world. It is a dish of raw fish that is marinated in citrus juice, onions, and chili. The acid in the citrus juice 'cooks' the fish, giving it a cooked texture without applying heat. This method of cooking helps to preserve the flavor and texture of the fish. Ceviche is typically served with crackers, tortilla chips, or bread, but it can also be served on a bed of lettuce to make it a more substantial meal. The addition of chili gives it a spicy kick that perfectly complements the tangy citrus flavor of the marinade.

Instructions

1.Cube the white fish fillet into bite-size pieces and place in a bowl.
2.Squeeze the lime or lemon juice over the fish and let it marinate for 10-15 minutes or until the fish turns opaque.
3.Add in the thinly sliced red onion, chopped tomatoes, and green chili pepper.
4.Mix well and add in the fresh coriander or parsley and olive oil.
