1 1/2 lbs boneless pork chops , cut into bite size pieces
2 1/2 cups onions , chopped

8 ounces fresh chorizo sausage , no casing
2 cans fire roasted diced tomatoes , undrained ( Hunts )
1 2/3 cups reduced-sodium chicken broth
1 1/2 teaspoons paprika
1/4 teaspoon salt
1/4 teaspoon ground red pepper

Instructions

1.Heat 1 tbsp. olive oil in a large nonstick skillet over medium-high heat.
2.Add the broken pasta to the skillet and cook until lightly browned while stirring frequently. Remove the pasta and set aside.
3.In the same skillet, heat the remaining oil and add chopped onions; cook until softened for about 5 minutes. Add garlic, pork, and chorizo; cook until pork is browned for about 6 minutes. Stir in tomatoes, paprika, salt, and red pepper, then add 2 1/3 cups broth, and bring to a boil.
4.Return pasta to the skillet, stirring it into the liquid.
5.Reduce heat to low, cover the skillet and cook for 15-20 minutes, stirring occassionally, or until the pasta is cooked through and soft.
6.If pasta is too dry, add more broth or water to reach desired consistency. Serve and enjoy!
