3/4 cup water
1 cup grated Greek Kefalotiri or Parmesan cheese
1 potato , peeled and cut into 1/2-inch cubes
1/2 cup long grain rice
1 teaspoon minced parsley
1 teaspoon chopped fresh mint or spearmint
1/2 teaspoon dried marjoram
salt and pepper to taste
1 egg , beaten

Instructions

1.In a large bowl, combine the flour, olive oil, white wine, water, and salt to form a dough. Knead until smooth and let it rest for 30 minutes.
2.In a large pot, heat the olive oil and sauté the onion and garlic until translucent. Add the lamb and pork and cook until browned.
3.Add the tomato paste, white wine, and water and simmer for 30 minutes.
4.Preheat the oven to 375°F. Grease a rectangular baking pan and roll out the dough into 2 thin sheets. Place the first sheet in the pan, spread the meat mixture on top, and sprinkle the cheese on top. Layer the potato cubes, rice, parsley, mint, marjoram, salt, and pepper.
5.Place the second sheet of dough on top, brush with the beaten egg, and bake for 45-50 minutes until golden brown and crispy.
