Ingredients

1/4 cup unsalted butter ( sweet )
1 leek , white part only , chopped
1 shallot , chopped
2 cups porcini mushrooms , thickly sliced ( aka cep mushrooms )
1/4 cup plain flour ( all-purpose )
1/2 cup double cream ( heavy )
1 tablespoon chopped fresh parsley
salt & fresh ground pepper
1 1/4 lbs chicken wings
1 small onion , chopped
1 leek , green part only , chopped
6 1/4 cups water
Cep mushrooms, also known as porcini mushrooms, have a rich, earthy flavor that makes them a popular ingredient in soups and sauces. In this recipe, they are used to create a hearty and flavorful mushroom soup, which is then elevated to another level with the addition of roasted chicken wings. Instructions

1.Preheat oven to 425°F. Spread chicken wings in a single layer in a roasting pan and roast until well browned, about 45 minutes.
2.Meanwhile, in a large pot, melt the butter over medium heat. Add the white part of the leek and the shallot and sauté until translucent, about 5 minutes. Add the sliced mushrooms and cook for another 10 minutes.
3.Sprinkle flour over the mushroom mixture and stir until well incorporated. Gradually add the water, whisking constantly, until the soup comes to a boil. Reduce heat to low and let simmer for 30 minutes.
4.Remove chicken wings from oven and add them to the pot, along with the chopped onion and green part of the leek. Continue to simmer for another 20 minutes.
5.Remove pot from heat and let cool slightly. Using a slotted spoon, remove the chicken wings from the soup and discard. Using an immersion blender, blend the soup until smooth. Stir in heavy cream and parsley. Season with salt and fresh ground pepper to taste.
