Ingredients

2 cups parbroiled rice ( prefferably Uncle Ben 's )
4 1/4 cups water
2 -3 tablespoons cooking oil
2 skinless chicken breasts ( boiled , cooked and shredded )
1 cup frozen peas and carrot
1/4 cup chopped bell pepper
1/4 cup chopped onion
2 -3 tablespoons curry powder
salt
Central American Yellow Rice and Chicken is a popular dish that originated in the Caribbean and Latin America. Instructions

1.Rinse the rice several times until the water runs clear.
2.In a large pot, heat the oil over medium-high heat.
3.Add the onions and bell pepper and sauté for 2-3 minutes until they soften.
4.Add the curry powder and stir well for about 1 minute.
5.Add the chicken, salt, peas and carrots, and stir for another minute.
6.Add the rice and stir to coat with the curry and other ingredients.
7.Pour in the water and stir again to combine everything evenly.
8.Bring to a boil and then reduce the heat to low and cover the pot.
9.Let it simmer for about 30-35 minutes until the rice is tender and has absorbed all the water.
10.Once it's done, remove from the heat, leaving it covered, for 5-10 minutes to steam and fluff up the rice before serving.
