2 lemons , juice and rind of , thinly pared peel
6 whole cloves
1 cinnamon stick , broken into pieces
8 pints water
3 lbs flower honey or 3 lbs light honey
1 ounce mead , wine or 1 ounce baker 's yeast

Instructions

1.Crush the gingerroot and add to a large pot with the lemon rind and juice, cloves, and cinnamon.

5.After the waiting period, strain the mixture through a cheesecloth, discarding any solids.

7.Replace the lid and store in a cool, dark place for at least two months before drinking.
