Ingredients

6 celery hearts or celery
1/2 cup wine vinegar
1/2 cup water
1 tablespoon fresh lemon juice
2 teaspoons dried parsley ( use fresh if you like , about 2 tablespoons )
1 teaspoon dried oregano
1/2 teaspoon thyme
1 bay leaf
1/2 teaspoon salt
1/4 teaspoon fresh ground pepper
1 pinch cayenne
lettuce leaf
2 tablespoons capers
2 tablespoons chopped pimiento
2 tablespoons black olives , chopped ( optional )
Celery Victor is a classic American appetizer that was invented in the early 20th century. It is named after Victor Hirtzler, a chef who worked at the famous St. Francis Hotel in San Francisco. This refreshing and flavorful dish features celery hearts or celery sticks that are cooked until they are tender yet crisp in a tangy vinaigrette made with vinegar, lemon juice, and spices. The dish is typically served chilled on a bed of lettuce leaves and garnished with capers, pimiento, and black olives.

Instructions

1.Clean and trim celery hearts/celery and cut them into 3 inch long sticks
2.In a saucepan, combine vinegar, water, lemon juice, parsley, oregano, thyme, bay leaf, salt, pepper and cayenne. Bring to a boil over medium heat.
3.Add the celery sticks and simmer for 3-4 minutes or until the celery is tender yet crisp.
4.Remove from heat and let it cool until room temperature.
5.Once cooled, drain the celery sticks and discard the spices and bay leaf.
6.Arrange lettuce leaves on a serving dish.
7.Place the celery sticks on top of the lettuce leaves.
8.Sprinkle capers, pimiento and olives over the celery sticks.
9.Cover with plastic wrap and refrigerate for few hours before serving.
