Ingredients

2 tablespoons vegetable oil
2 onions , diced
1 teaspoon soft thyme leaves
1 bay leaf
1 garlic clove , finely diced
1 lb floury potato , peeled and cut into 1/2in cubes
1 lb celeriac , peeled and cut into 1/2in cubes
1 tablespoon lemon juice
salt & freshly ground black pepper
1 3/4 pints chicken stock or 1 3/4 pints vegetable stock
1 1/4 cups heavy cream
snipped chives or celery leaves , to garnish
Celeriac Vichyssoise, also known as Chilled Celery Soup, is a classic French soup that is popular in the summertime. Instructions

1.Heat the vegetable oil in a large pot over medium-high heat.
2.Add the diced onions, thyme leaves, bay leaf, and finely diced garlic to the pot. Cook for 5 minutes until they are softened.
3.Add the peeled and cubed floury potato and celeriac to the pot. Stir everything to combine and cook for an additional 5 minutes.
4.Add the lemon juice, salt, and freshly ground black pepper to the pot. Pour in the chicken stock or vegetable stock and bring to a boil. Reduce the heat to low and let it simmer for 30-40 minutes, or until the vegetables are tender.
5.Remove the bay leaf from the pot, and stir in the heavy cream. Puree the soup with an immersion blender or transfer to a blender or food processor to blend until smooth.
6.Let the soup cool and then chill it in the refrigerator until it is ready to serve.
7.Garnish the soup with snipped chives or celery leaves before serving.
