Ingredients

1 head cauliflower , cut into florets
1 slice bread , crusts removed
2 tablespoons vinegar
water
2 garlic cloves , roughly chopped
1 sprig parsley
handful celery leaves ( optional )
6 tablespoons olive oil
salt
pepper

Instructions

1.Cut the cauliflower into florets and cook in a pot of boiling salted water for 8-10 minutes, until tender.
2.While the cauliflower is cooking, tear up the bread and put it in a bowl with the vinegar and enough water to cover it. Set aside to soak for about 5 minutes.
3.Put the garlic, parsley, and celery leaves (if using) into a blender or food processor. Drain the bread and add it to the blender along with the olive oil and a pinch of salt. Puree until smooth.
4.Drain the cooked cauliflower and arrange it on a platter. Drizzle with the garlic sauce and sprinkle with black pepper. Serve hot or at room temperature.
