Instructions

1.Preheat the oven to 350°F (180°C).
2.In a large skillet, sauté the mushrooms and onions in 2 tablespoons of butter over medium heat.
3.Add the lemon juice, cauliflower florets, garlic, basil, salt, and pepper. Sautee until the cauliflower is tender.
4.In a mixing bowl, stir together the cooked brown rice, sauteed cauliflower mixture, and grated Swiss cheese.
5.Pour into a casserole dish.
6.Top with the remaining tablespoon of butter and the toasted walnut pieces.
7.Bake for 25-30 minutes, or until golden brown and bubbly.
