Ingredients

3/4 cup half-and-half
1/2 cup almonds , whole roasted with skin
2 tablespoons almonds , coarsely chopped
4 tablespoons unsalted butter
2 tablespoons all-purpose flour
1 cup whole milk
3/4 cup manchego cheese , finely shredded ( or other mildly nutty semi-aged sheep 's or cow's-milk cheese ) or 3/4 cup gouda cheese , plus
2 tablespoons manchego cheese , finely shredded or 2 tablespoons gouda cheese
nutmeg , freshly grated
fresh ground pepper
2 lbs cauliflower , cut into 1 1/2-inch florets
1 medium onion , finely chopped
1/4 teaspoon paprika ( Pimenta de la Vera- smoked Spanish paprika )

Instructions

1.Preheat oven to 375°F. Toast almonds on a baking sheet for about 10-12 minutes and let it cool. Chop 2 tablespoons of toasted almonds coarsely and process the rest until it becomes fine.
2.Melt butter on medium heat in a saucepan and add flour. Whisk it continuously until it turns smooth. Add milk, and whisk again until the texture becomes thick and smooth. Add the half-and-half and whisk again.
3.Add manchego cheese/shredded gouda cheese to the saucepan and stir it to melt. Also, add grated nutmeg and season it with fresh ground pepper.
4.In a bowl, mix the cauliflower florets, chopped onion, and paprika. Season it with fresh ground pepper. Pour the mixture into another baking dish and pour the melted cheese on top. Add the almonds.
5.Cover the dish with foil and bake for about 30 minutes. Remove the foil and bake until the cheese becomes bubbling golden brown (around 15-20 minutes).
