1 head cauliflower | |
1 tbsp olive oil | |
1/2 onion, diced | |
1/2 cup frozen peas and carrots | |
2 cloves garlic, minced | |
2 eggs, beaten | |
3 tbsp low-sodium soy sauce | |
1 tsp sesame oil | |
2 green onions, sliced |
1. | Cut cauliflower into florets |
2. | Pulse cauliflower in a food processor until it resembles rice |
3. | Heat olive oil in a large pan |
4. | Add onion, peas, and carrots. Cook until tender. |
5. | Add garlic. Cook for 1 minute. |
6. | Push veggies aside and pour eggs into an empty space. Scramble eggs until fully cooked. |
7. | Mix everything together. |
8. | Stir in soy sauce and sesame oil. |
9. | Add green onions and serve. |
