Ingredients

1 cauliflower head , outer leaves removed
100 g shelled and unsalted pistachios , roughly chopped
20 g fresh flat-leaf parsley , leaves only , washed and well dried
20 g fresh coriander , leaves and stems , washed and well dried
80 g extra virgin olive oil
40 g fresh lemon juice
1/4 teaspoon ground cinnamon
1/4 teaspoon ground allspice
2 pinches salt
2 pinches fresh ground black pepper
100 g currants
2 pomegranates
pomegranate molasses , to drizzle
sumac , to sprinkle
fresh coriander , leaves only , roughly chopped to garnish
fresh flat-leaf parsley , leaves only , roughly chopped to garnish
Cauliflower cous-cous is a healthy and delicious alternative to traditional cous-cous. It is a popular dish among people who are following a low-carb or gluten-free diet. This recipe adds a twist to the traditional cauliflower cous-cous recipe, by adding chopped pistachios, currants and pomegranates for an added flavor and nutrients. The dish is easy to prepare in a Thermomix, and can be served as a standalone dish or as a side dish to accompany your favorite main course. Instructions

1.Break the cauliflower into florets and put them into the mixing bowl. Blitz on speed 5 for 5 seconds.
2.Scrape down the sides of the bowl and blitz again on speed 5 for 5-10 seconds until the cauliflower resembles cous-cous.
3.Transfer the cauliflower into a large mixing bowl and add the chopped pistachios, coriander, parsley, currants and pomegranate seeds. Mix well.
4.In a separate bowl, whisk together the olive oil, lemon juice, cinnamon and allspice. Add salt and pepper, to taste.
5.Pour the olive oil mixture over the cauliflower mixture and toss to combine.
6.Drizzle with pomegranate molasses and sprinkle with sumac.
7.Serve garnished with coriander and parsley leaves.
