Ingredients

5 cups stock or 5 cups broth
1 onion
1 garlic clove
5 ounces bacon , diced
1 tablespoon olive oil
10 ounces arborio rice
6 tablespoons white wine
18 ounces cauliflower florets
4 ounces gruyere cheese , grated
2 tablespoons lemon juice
salt and pepper
Cauliflower and Gruyere Risotto is a twist on the classic Italian dish that is traditionally made with Arborio rice, broth, and Parmesan cheese. Instructions

1.In a large pot, heat the stock/broth and keep it warm on low heat.
2.In a separate pot on medium heat, cook the onion and garlic in olive oil until translucent.
3.Add the bacon to the pot and cook for another minute.
4.Add the arborio rice to the pot and stir to coat it with the oil, onion, and garlic mixture.
5.Pour in the white wine and stir until almost all the liquid is absorbed.
6.Add the cauliflower florets and a ladleful of the warm broth/stock to the pot.
7.Keep adding a ladleful of the broth/stock at a time, stirring constantly, for about 20 minutes or until the rice and cauliflower are tender.
8.Stir in the grated gruyere cheese and lemon juice until the cheese is melted and everything is well combined.
9.Season with salt and pepper, to taste.
10.Serve hot, garnished with extra grated cheese and fresh herbs.
