Ingredients

1 medium cauliflower , chopped
1 bunch fresh coriander leaves , chopped
1 inch ginger , peeled and grated
2 spring onions , chopped
1 1/4 cups plain flour ( maida )
1/4 cup rice flour
1/4 cup cornflour
1 teaspoon red chili powder
1/4 cup soya sauce
water , enough to make a smooth batter ( as is made for pakoras )
oil , to deep fry
Cauliflower and Coriander Pakoras are a twist on the classic Indian snack originated in the northern region of India. Pakoras are often made with besan flour, also known as gram flour, but in this recipe, we use a combination of plain flour, rice flour, and cornflour. The cauliflower gives the pakoras a unique texture while the coriander and ginger add fresh flavors to the dish. Enjoy them as a snack or appetizer with mint chutney or tamarind chutney, or serve them as a side dish with a spicy curry. They are perfect for sharing with friends and family!

Instructions

1.In a large bowl, mix together the chopped cauliflower, chopped coriander leaves, grated ginger, and chopped spring onions.
2.Add the plain flour, rice flour, cornflour, red chili powder, and soya sauce to the bowl and mix everything together well.
3.Gradually add enough water to the bowl, stirring constantly, to create a smooth batter.
4.Heat oil in a deep fryer or a large pot over medium-high heat.
5.Drop spoonfuls of the pakora batter into the hot oil and fry until crispy and golden brown, stirring occasionally to ensure they are evenly cooked.
6.Remove the pakoras from the oil using a slotted spoon and place them on paper towels to drain any excess oil.

The Cauliflower and Coriander Pakoras are crispy on the outside, soft and flavorful on the inside.

They are a healthier take on traditional pakoras, as they are not made exclusively from besan flour.
