Ingredients

1 lb chicken breast , boneless , skinless OR
1 lb lean ground beef
1 onion , medium chopped
1/2 cup sour cream ( not reduced fat ! )
1 cup cheddar cheese , shredded
1/4 teaspoon pepper
1/3 cup green bell pepper , chopped
2/3 cup water
1 tablespoon chili powder
1 1/2 teaspoons oregano leaves , dried
1/4 teaspoon ground cumin
2 mild green chilies , whole , chopped
1 fresh garlic clove , minced
15 ounces tomato sauce
flour tortilla
lettuce , shredded
tomatoes , diced
sour cream
guacamole
refried beans

Instructions

1.Preheat oven to 350F degrees.
2.Boil chicken breast in water or cook ground beef and set aside to cool.
3.Add garlic, onion and pepper to skillet and sauté until onion is translucent.
4.Add oregano, chili powder, cumin and green chilies. Cook for 1 minute.
5.Add tomato sauce and water. Simmer for 10 minutes.
6.Add half of the cheese and stir until melted. Turn off heat.
7.Mix half of the sauce with chicken breast and set aside. (If using ground beef, add it to the sauce.)
8.Place a few tablespoons of chicken mixture into each tortilla and roll them up.
9.Place tortillas seam side down in a greased baking dish.
10.Pour the remaining sauce on top of tortillas and sprinkle the rest of the cheese on top.
11.Bake for 20-25 minutes.
12.Serve with shredded lettuce, diced tomatoes, sour cream, guacamole and refried beans.
