Ingredients

1 1/2 lbs catfish , can use tilapia and snapper too
1 medium onion
1 large tomatoes
1 medium green bell pepper
2 tablespoons olive oil , can use corn oil
1 teaspoon bottled crushed garlic
1/2 teaspoon ground ginger , can use 1 tsp . bottled fresh ginger
1 teaspoon paprika
1 teaspoon coriander
1/2 teaspoon ground cumin
1/2 teaspoon ground turmeric
1/2 teaspoon salt
1/8 teaspoon cayenne pepper

Instructions

1.Rinse the fish, pat dry and cut into bite-size pieces.
2.Deseed the bell pepper, dice into bite-size pieces and set aside. Dice the onion and tomato.
3.In a mixing bowl, mix crushed garlic, ginger, paprika, coriander, cumin, turmeric, salt and cayenne pepper. Add 2 tablespoons of water mix till well combined.
4.Heat the oil in a large pan over medium heat. Add onions & saute till translucent.
5.Turn heat to high and add the seasoned fish. Cook for 2-3 minutes on both sides until browned.
6.Add the diced bell pepper, saute for a minute or two.
7.Add the diced tomato sauté for 4-5 minutes till it dissolves.
8.Simmer for 4-5 minutes until slightly thickened and heated through.
9.Serve hot with your preferred accompaniment.
