Ingredients

2 tablespoons extra virgin olive oil
6 garlic cloves , peeled and cut in half lengthwise
1 tablespoon paprika
1/2 teaspoon cumin
1 pinch cayenne
6 cups water
kosher salt
1 pinch saffron , crumbled
4 large eggs
4 slices country bread , toasted
1 tablespoon fresh flat leaf parsley , chopped
freshly grated parmesan cheese ( optional )
Castilian garlic soup, or sopa de ajo, is a traditional Spanish soup that has been enjoyed for centuries. This rustic soup is made with simple, humble ingredients like garlic, bread, and water, but the combination of flavors and textures is anything but basic. The addition of smoked paprika and saffron takes this soup to the next level, giving it a rich and earthy flavor that is perfect for chilly evenings.

Instructions

1.Heat the olive oil in a large pot over medium heat. Add garlic and stir well to coat with the oil. Cook for 5-6 minutes, stirring occasionally, until the garlic is golden but not browned.
2.Add the paprika, cumin, and cayenne to the pot and stir to combine. Add the water and a large pinch of salt, and bring the soup to a simmer over high heat.
3.Add the saffron to the soup and stir well to combine. Reduce the heat to low and let the soup simmer for 20-25 minutes, until the flavors have melded together and the soup has thickened slightly.
4.While the soup is simmering, poach the eggs: Fill a medium-sized pot with water and bring to a gentle simmer over medium-low heat. Crack each egg into a small bowl or cup. When the water is simmering, carefully slide each egg into the water. Let cook for 3-4 minutes, until the whites are set but the yolks are still runny.
5.To serve, place a slice of toasted bread in the bottom of each bowl. Ladle the soup over the bread and top with a poached egg. Sprinkle with parsley and grated Parmesan cheese, if desired.
