Ingredients

72 snails , canned
200 g button mushrooms
200 g porcini mushrooms ( sometimes called cepes , as in French )
2 tablespoons white wine vinegar
600 ml chablis ( white Burgundy wine )
600 ml chicken broth
3 shallots
2 garlic cloves
30 g butter
3 tablespoons chopped parsley
5 tablespoons creme fraiche
salt
pepper

Instructions

1.Drain and rinse snails. Set aside.
2.Clean and slice mushrooms. Set aside.

4.Lower heat and simmer for 25 minutes.
5.In a separate pan over medium heat, sauté shallots and garlic in butter until soft.
6.Add mushrooms and cook for 10 minutes.
7.Add snails and cook for another 5 minutes.
8.In a small bowl, mix chopped parsley and creme fraiche together.
9.Add mixture to the snail mixture and stir thoroughly.
10.Season with salt and pepper to taste.
11.Pour snail mixture into individual casseroles.
12.Bake in a preheated oven at 375°F (190°C) for 10-15 minutes, or until the top is golden brown.
