Ingredients

1 pint vanilla ice cream
1 pint chocolate ice cream
1 pint pistachio ice cream
2 1/2 cups heavy cream ( not ultra-pastuerized )
1/4 cup powdered sugar
1/2 cup hazelnuts , toasted and finely chopped
1/4 lb bittersweet chocolate ( I use Lindt or Caillebaut )
Cassata Gelata I is a traditional Sicilian dessert that is typically made with ricotta cheese and candied fruit. This version features a molded ice cream cake made with three flavors of ice cream and chopped hazelnuts, served with warm bittersweet chocolate sauce. It's a perfect dessert for summer entertaining or a special occasion.

Instructions

1.Soften the vanilla ice cream by leaving it at room temperature for 10 minutes.
2.Line a 1-quart mold with plastic wrap, leaving excess wrap hanging over the sides.
3.Spoon the vanilla ice cream into the bottom of the mold and smooth it out.
4.Add the hazelnuts in an even layer on top of the ice cream.
5.Soften the chocolate ice cream by leaving it at room temperature for 10 minutes.
6.Spoon the chocolate ice cream on top of the hazelnuts, smoothing it out.
7.Soften the pistachio ice cream by leaving it at room temperature for 10 minutes.
8.Spoon the pistachio ice cream on top of the chocolate ice cream, smoothing it out.
9.Fold the excess plastic wrap over the top of the ice cream and freeze for at least 6 hours or overnight.
10.Remove the ice cream from the mold by lifting the excess plastic wrap.
11.Make the chocolate sauce: chop the bittersweet chocolate and place it in a small saucepan along with 1/2 cup of heavy cream.
12.Heat the mixture over low heat, stirring constantly, until the chocolate is melted and the mixture is smooth.
13.Remove from heat and let cool slightly.
14.Serve the Cassata Gelata I sliced with the warm chocolate sauce drizzled over the top.
