1 lb fresh lotus root , strips

Instructions

1.In a bowl, mix chicken, 1 teaspoon salt, 1 teaspoon sugar, granulated onion, granulated garlic, ginger powder, and Shaoxing wine. Marinate for 15 minutes.
2.Dust chicken with cornstarch.
3.In a wok, heat oil over high heat. Add chicken to cook until brown. Remove.
4.Using the same wok, add chicken broth, shiitake mushroom, lotus root, and the remaining salt. Reduce heat to medium, and simmer for 5 minutes.
5.Stir in cornstarch paste to thicken the sauce. Add chicken and cashew nuts. Cook for another minute. Serve.
