fresh ground black pepper , to taste

Instructions

1.In a large pot, heat 4 tablespoons of ghee or vegetable oil over medium heat.
2.Add the finely chopped leeks or celery ribs and leeks to the pot and sauté for 8-10 minutes, stirring occasionally.
3.Add garlic, diced potatoes, salt, and freshly ground black pepper to the pot and sauté for 2-3 minutes before pouring in 2 liters of water or stock.
4.Bring the pot to a boil and reduce the heat. Cover the pot and let it simmer for 20-25 minutes or until the potatoes are tender.
5.Use an immersion blender or transfer the soup to a blender and puree until smooth.
6.Add salt and pepper to taste if necessary and garnish the soup with chopped cashews before serving.
