Ingredients

2/3 cup olive oil
7 tablespoons balsamic vinegar
2 garlic cloves , minced

15 ounces canned pears , drained and sliced
1 1/4 cups crumbs from digestive biscuits ( graham crackers may be used , but they are sweeter )
1/2 cup ground walnuts
3/4 cup unsalted butter , melted
6 ounces blue cheese , cut into small pieces , Cashel Blue preferred
6 eggs
3 packages cream cheese , at room temperature
1 tablespoon fresh chives , minced
1 tablespoon green onion , chopped
pepper
10 ounces mixed salad greens ( optional )

Instructions

1.Preheat oven to 350°F.
2.In a bowl, mix together olive oil, balsamic vinegar, garlic gloves, salt, pepper, and mixed peppercorns and fold in the canned pears.
3.In a separate bowl, combine the digestive biscuit crumbs, ground walnuts, and melted butter.
4.Add the crumb mixture to the bottom of a 9-inch springform pan and bake for 10 minutes.
5.Let the crust cool.
6.In a separate bowl, beat the eggs and cream cheese together. Add in chives, green onion, and pepper.
7.Fold in the small pieces of blue cheese and the mixture is well blended.
8.Pour the mixture onto the cool crust and place the pan in the oven. Bake for 45 minutes or until the edges are lightly browned and the center is just set.
9.Let the cheesecake cool on a wire rack, then refrigerate it for at least 4 hours.
10.Serve with mixed salad greens (Optional).
