Casco Bay Rice is a seafood and rice dish that is inspired by the flavors of the Atlantic coast. The dish is named after Casco Bay, a large inlet in Maine that is known for its shellfish and lobster. This dish is a fusion of different ingredients, including fresh shrimp and crabmeat, marinated artichoke hearts, and fragrant basil. The rice is cooked separately and then combined with the seafood mixture, resulting in a delicious and hearty meal that is perfect for lunch or dinner.

Instructions

1.Rinse and drain the rice, then add it to a medium pot with 2 cups of water. Bring it to a boil over medium-high heat, then cover and reduce the heat to low. Simmer for about 15-20 minutes, or until the rice is tender and fully cooked.
2.Drain the artichoke hearts, reserving the marinade. Chop the hearts into small pieces and set them aside.
3.Heat up a large skillet over medium-high heat. Add the minced red onion and stir-fry for 1-2 minutes, until softened. Deglaze the skillet with sherry wine, then add the dry white wine, chopped artichoke hearts, and dried basil. Stir well and bring to a boil.
4.Reduce the heat to medium and add the peeled and deveined shrimp to the skillet. Season with salt and pepper to taste. Cook for 3-4 minutes, or until the shrimp turn pink and cooked through.
5.Finally, add the picked-over crabmeat and diced tomato to the skillet. Stir gently to combine, then turn off the heat. Cover the skillet with a lid and let it sit for 1-2 minutes, allowing the flavors to meld together.
6.Spoon the cooked rice into bowls and top with the shrimp and crabmeat mixture. Serve immediately, garnished with fresh herbs if desired.
