1 cup lard , at room temperature , divided
2 tablespoons grated Parmesan cheese
1 pinch freshly ground black pepper
2 tablespoons grated pecorino Romano cheese
1 package salami chunks

Instructions

1.In a small bowl, dissolve the yeast in 1/2 cup of warm water and let sit for 10-15 minutes.
2.In a large mixing bowl, combine flour, salt, 1/2 cup of lard, Parmesan cheese, and black pepper.
3.Add the dissolved yeast and remaining water to the mixture. Knead the dough until it becomes smooth and elastic.
4.Cover the dough with a cloth and let it rest for 2 hours.
5.Divide the dough into two portions and roll them out into disks. Place them on a baking sheet.
6.Spread the remaining lard over the dough and sprinkle the pecorino Romano cheese and salami chunks on top.
7.Crack the eggs over the disks, spacing them evenly apart.
8.Let the dough rest for another hour.
9.Preheat the oven to 375°F (190°C) and bake the dough for 40-50 minutes, or until golden brown.
