1 cup long-grain rice
1/2 teaspoon ground cumin

1/8 teaspoon red pepper flakes
8 ounces tomatoes , mashed with a fork
1/2 cup smooth peanut butter
1 1/2 cups chicken broth
4 hard-boiled eggs
plain yogurt , garnish ( optional )

Instructions

1.Preheat the oven to 375°F (190°C).
2.In a large ovenproof skillet over medium-high heat, melt 2 tablespoons of butter and olive oil.
3.Season the chicken thighs with salt and sear until golden brown on each side for 3-4 minutes.
4.Remove the chicken and set aside on a plate.
5.In the same skillet, melt the remaining tablespoon of butter and sauté onions and garlic over medium heat for 3-4 minutes until softened.
6.Add rice, cumin, coriander, ginger, and red pepper flakes, stirring until the rice is slightly browned and coated in oil for about 5 minutes.
7.Stir in the mashed tomatoes, peanut butter, and chicken broth and bring it to a boil.
8.Once boiled, lower the heat and place the seared chicken back into the skillet.
9.Cover the skillet with a lid and transfer it to the oven for 20-25 minutes until the chicken is cooked through.
10.Remove the skillet from the oven and let it sit for 5 minutes.
11.Garnish with sliced hard-boiled eggs and a dollop of plain yogurt and serve hot.
