Ingredients

2 tablespoons olive oil
3 garlic cloves , crushed
1 small red chile , finely chopped ( mine was a Serrano )
1 large onion , finely chopped
200 g chorizo sausage , finely chopped
300 g diced chicken ( I used thigh meat )
1 1/2 cups rice ( I had to use long grain )
1/4 teaspoon saffron ( optional )
1 teaspoon smoked paprika ( optional )
2 teaspoons sweet paprika
1/4 teaspoon thyme
1 teaspoon black pepper
2 teaspoons chicken stock powder
1/2 cup white wine
2 cups boiling water
1 can crushed tomatoes
1 tablespoon tomato paste
1 cup frozen peas ( defrosted )
1/2 cup corn
100 g raw prawns ( large raw shrimp )
coriander ( optional )
Tabasco sauce ( optional )
lemon wedge ( optional )

This rice dish is packed with flavor thanks to the chicken, prawns, and chorizo sausage, which are cooked together with rice, peas, and corn. Instructions

1.In a large skillet, heat olive oil over medium-high heat.
2.Add garlic, red chili, and onion, and cook until onion is translucent.
3.Add chorizo sausage and diced chicken, and cook until browned.
4.Add rice, saffron, smoked paprika, sweet paprika, thyme, black pepper, and chicken stock powder.
5.Stir well, until rice is coated in spices.
6.Add white wine and boiling water, stir well.
7.Add crushed tomatoes, tomato paste, frozen peas, and corn.
8.Bring to a simmer and cover with a lid.
9.Cook for 15 minutes, then add raw prawns.
10.Cover and cook until the rice is fully cooked and the prawns are pink.
11.To serve, garnish with coriander and Tabasco sauce (optional) and squeeze with lemon.
