Ingredients

300 g carrots
200 ml milk
350 g flour
2 eggs
2 teaspoons salt
1 teaspoon oil
nutmeg
more salt , for boiling and frying

Instructions

1.Peel and grate the carrots finely.
2.In a mixing bowl, whisk together the eggs, milk, flour, salt and oil until smooth. Stir in the grated carrots and nutmeg.
3.Bring a large pot of salted water to a boil.
4.In the meantime, place a large sieve or colander over the pot of boiling water with the spatzle dough in it.
5.With a spatula or dough scraper, press the dough through the holes in the sieve or colander and into the boiling water. Let boil for 1-2 minutes or until the spatzle swim on the surface.
6.Use a slotted spoon to remove the spatzle from the water. Rinse in cold water and set aside.
7.Heat some oil in a skillet over medium heat and add the spatzle. Fry them until golden brown, stirring occasionally.
8.Serve the spatzle hot as a side dish or as a main course with a green salad.
