Ingredients

250 g minced beef
1/4 cup crunchy peanut butter
1/4 cup fresh breadcrumb
1/4 cup grated carrot
1 tablespoon tomato sauce
2 spring onions , finely chopped
1 teaspoon vegemite
1 teaspoon curry powder
These Carrot Satay Meatballs using Vegemite are a unique twist on the classic meatballs recipe. Instructions

1.Preheat oven to 200C/180C fan-forced.
2.Grease a baking dish.
3.In a bowl, mix all the ingredients together except for the peanut butter.
4.Roll the mixture into small meatballs (around 2cm wide).
5.Place on the baking dish and bake for 10-12 mins.
6.Remove the meatballs from the oven, spoon some peanut butter onto each meatball, then return to the oven for another 2-3 minutes or until browned.
