4 -5 carrots , grated
1 potato , boiled and mashed
2 -3 teaspoons panir , crumbled
1 teaspoon red chili powder
1 teaspoon salt
1 green chili , cut into very small pieces
1/2 teaspoon ginger powder
1 -2 teaspoon gram flour , to bind
1 teaspoon butter
oil , to deep fry
1 cup low-fat yogurt or 1 cup tomato paste
1/2 teaspoon turmeric powder
1 teaspoon red chili powder
salt
1 teaspoon gram flour
1 teaspoon sugar
1 teaspoon mustard seeds
1 teaspoon cumin seed
1 teaspoon ajwain ( optional )
1/2 cup water
1 large onions or 2 small onions , finely chopped
1/2 inch ginger , finely chopped
1 tablespoon oil
coriander leaves , as much as required
cream , as much as required ( I omit this as I 'm cutting out fatty foods from my diet )

Instructions

1.In a bowl, mix grated carrots, boiled and mashed potato, crumbled panir, red chili powder, salt, green chili, ginger powder, and gram flour.
2.Use your hand or a spoon to mix until all ingredients are well combined.
3.Heat oil in a wok or a deep pan on medium heat. Take a small portion of the mixture and flatten it into a small disc using your palm. Repeat the process with the remaining mixture.
4.Drop the flattened discs into the hot oil, and deep fry them until golden brown. Use a slotted spoon to take them out.
5.In another pan, heat 1 tablespoon oil. Add mustard seeds, cumin seeds, ajwain, chopped onion, and ginger. Saute until onion turns translucent.
6.Add turmeric, red chili powder, salt, gram flour, sugar, and water. Cook for 2-3 minutes until the sauce thickens.
7.Take a deep serving bowl. Pour low-fat yogurt or tomato paste at the bottom.
8.Arrange fried carrot koftas on top of the sauce in the bowl.
9.Pour the remaining sauce on top of the koftas.
10.Add some chopped coriander and cream (skip if you are avoiding fatty foods) on top of the sauce.
