Ingredients

2 tablespoons canola oil
1 teaspoon brown mustard seeds
2 teaspoons yellow split peas , lightly crushed
1 teaspoon ground turmeric
1/2 teaspoon paprika
24 curry leaves ( basil or bay can be substituted )
2 dried arbol chiles
1 1/4 lbs carrots , sliced crosswise
salt and pepper , to taste
cooked basmati rice , to serve

Instructions

1.Heat the oil in a large skillet over medium heat.
2.Add the mustard seeds, yellow split peas, turmeric, and paprika and cook for 2-3 minutes.

4.Add the sliced carrots and season with salt and pepper. Stir until the carrots are coated with the spice mixture.
5.Pour in 1/2 cup of water and bring the mixture to a boil. Reduce the heat to low and simmer until the carrots are tender, approximately 10-15 minutes.
6.Serve the Carrot Kari hot with cooked basmati rice.
