Ingredients

2 cups yoghurt
1 teaspoon sugar , to taste
salt , to taste ( black salt preferable if you manage to get it )
1/2 teaspoon cumin powder
1/4 teaspoon ground cayenne pepper or 1/2 green chili , deseeded and chopped ( optional )
1/2 teaspoon oil
1/2 teaspoon mustard seeds
1 1/2 cups grated carrots ( or extra according to your preference )
2 tablespoons coriander leaves , chopped ( optional )
mint leaf ( to garnish ) ( optional )

Instructions

1.Beat the yoghurt and whisk it well.
2.Add sugar, salt, cumin powder and cayenne pepper or green chili, mix it.
3.Heat oil and add mustard seeds, allow them to splutter.
4.Add grated carrots to the mustard seeds, mix it.
5.Turn off flame and allow it to cool.
6.Add the sautéed carrots to the yoghurt mixture and mix it well.
7.Serve your refreshing Carrot in Curd Accompaniment (raita) with parathas or any main course dishes.
8.Finally, garnish the raita with coriander leaves and mint leaves (optional).
