8 sheets phyllo pastry , thawed
2 teaspoons vegetable oil
2 medium carrots , grated
250 g feta cheese , crumbled
2 slices bacon , chopped
1/4 cup spring onion , chopped
3 eggs
1/2 cup evaporated milk
1/2 teaspoon dried basil
ground black pepper
Carrot & Feta Quiche is a savory dish that combines the creamy and salty flavors of feta cheese with the sweetness of grated carrots. It is a perfect dish for breakfast, lunch or dinner and can be enjoyed hot or cold. This quiche is a delicious and indulgent way to eat your daily dose of vegetables and protein. Instructions

1.Preheat the oven to 375°F (190°C) and grease a 9-inch (23cm) pie dish with cooking spray.
2.In a large skillet, heat the vegetable oil over medium heat. Add the grated carrots, chopped bacon, and spring onions and sauté for 5-10 minutes or until the vegetables are softened and lightly browned. Remove from the heat and set aside.
3.In a mixing bowl, whisk together the eggs, evaporated milk, dried basil, and black pepper. Stir in the crumbled feta cheese.
4.Lay the thawed phyllo pastry on a flat surface, and carefully place one sheet into the greased pie dish. Brush the sheet with vegetable oil, then add another sheet and repeat until all 8 sheets are used up.
5.Pour the egg and feta mixture into the pie dish, over the phyllo pastry. Top with the sautéed vegetables.
6.Bake the quiche for 30-35 minutes, or until it is cooked through and the edges of the phyllo pastry are golden brown.
