Ingredients

250 g carrots , shredded
200 g brown sugar
1 vanilla bean ( scrapings )
200 g melted butter
250 g roasted hazelnuts ( ground )
50 g flour
4 -5 eggs ( separated )
1 pinch salt
1 tablespoon baking powder
1 pinch cinnamon
1 teaspoon lemon zest ( i prefer orange ) or 1 teaspoon orange zest ( i prefer orange )

Instructions

1.Preheat the oven to 350°F (175°C) and grease a baking tin with a little butter.
2.In a large bowl, whisk together the egg yolks, sugar and vanilla until light and fluffy.
3.Fold in the shredded carrots, flour, baking powder and cinnamon until well combined.
4.In a separate bowl, beat the egg whites with a pinch of salt until stiff peaks form.
5.Gently fold the egg whites into the cake mixture until just combined.
6.Pour the mixture into the prepared baking tin and bake for 40-45 minutes, or until a toothpick inserted into the center of the cake comes out clean.
7.Once done, let the cake cool down before removing it from the tin and transferring it onto a wire rack to completely cool down.
8.In the meantime, melt the butter in a small saucepan and stir in the orange zest (or lemon zest, if using) and ground hazelnuts.
9.Spread the hazelnut frosting over the top of the cooled cake and serve.
